Football season is upon us which means, tailgate parties are officially happening! Over the weekend I headed to a friends house for a big game with lots of good food and fun times. The weather was beautiful and we had a giant 9 foot screen set up outside to watch the game on. It was hands down one of the best college football parties ever.
This tailgate party got my party food brain going and I realized I have got to have some friends over this season to watch a few games. There’s nothing better than the sound of football happening on TV, right? It reminds me of my childhood, hanging out on a crisp fall weekend watching football with my Dad. So to get ready for next weeks games, I thought I’d share these potatoes, caramelized onion sausage bites I plan to make. Complete with a yummy Dr Pepper® slushy. I headed to my Publix to grab all the ingredients. It’s a short list of items you need. Just pop over to the soda aisle, refrigerator aisle and grab a few veggies. This is all so easy to make and I’ll tell you how I did it.
THE PLAYERS
For the sausage bites, I started by baking some potatoes in the oven. Super easy, just throw them in for a good hour. If you want a little more color in your dish, use red potatoes. While those cook, you can grill your Johnsonville® Beddar Cheddar sausage until they’re nice and crispy on the outside and gooey (yes gooey because they’re filled with bits of cheese) in the middle. Next, you’re going to caramelize one white onion. Slice it thinly and add it to a pan with a little bit of olive oil. About half way through the caramelization add a few tablespoons of Dr Pepper. This adds a nice sweetness to the onions and helps to develop the color. Make sure to keep caramelizing them though, the color will totally fool you to thinking that they’re done before they’re truly caramelized!
Once all three parts are finished. Simply slice up your potato into discs and layer on onions and a slice of Johnsonville® Beddar Cheddar sausage. Lastly, I stuck a fun and festive football inspired toothpick in mine to keep them all together.
THE DR PEPPER MVP SLUSHIE
Most importantly, for the Dr Pepper slushies, all you have to do is add your Dr Pepper to a few ice cube trays and freeze. Once frozen, add them to a blender with chilled Dr Pepper and buzz it all together. Keep adding the chilled Dr Pepper until you get the consistency you like. A standard ratio to keep in mind is for every 8 Dr Pepper ice cubes, you’ll add about 12 oz of soda. Pour them into a mason jar and enjoy!
