While in Thailand, we discovered lots of new foods each and every day. From unique vegetables like baby eggplants to crazy new spices and herbs. But one of the most colorful and prettiest things we discovered was dragon fruit. They’re also known as pitayas.
Sure I’ve seen them before here and there, but who would ever think to grab one? Not me! These pretty fruits adorned with little black seeds in the perfect white flesh were at every single breakfast we had.
If you’ve never had one, they’re fairly mild. Nothing to really write home about. Which is actually a little sad because they’re just the prettiest and most wild-looking fruit. They have sort of the texture of a kiwi, but not as tart or sweet. So to spruce it up a bit and turn this pretty black and white meat into a fun cocktail, I had to add a little extra flavor.
So it was mojitos all the way. The addition of mint and soda water (you can add a little simple syrup too if you like) and lime made for the perfect refreshing and stunning cocktail.
Dragon Fruit Mojito Recipe
Ingredients
- 2 ounces of light rum
- 1/2 ounce of lime juice or you can always just throw in a couple of slices of lime
- 2-3 tbsp of diced dragon fruit – really just a small handful
- 1/2 ounce of simple syrup
- 5-7 fresh mint leaves, torn
- splash of soda water
Method
Step One
Start with your cocktail shaker and add in your fruit, mint, lime and simple syrup. Muddle the heck out this!
Step Two
Add your ice and rum to the cocktail shaker. Then shake it like crazy until the shaker is icy cold.
Step Three
Take the entire lid off the shaker and pour the mixture into a glass. The muddled-up fruit and mint is what makes a mojito so amazing. So don’t leave it in the shaker!
Step Four
Top with extra ice if you need it and add a splash of soda water. Garnish your dragonfruit mojito with a slice of dragonfruit.

Mojitos are always a great idea if you ask me. They’re super refreshing and so easy to make. I’ve made several on the blog like this blueberry kiwi mojito that was a personal favorite. And also my blackberry lavender mojito recipe that is a fun twist on a fruity combo.
But you can really add in any fruit you like for a mojito as long as you have fresh mint, lime and your favorite rum, you’re good to go! It’s always a good idea to muddle the fruit, mint and limes so that all the flavors can meld together. Here’s how to do it.

Dragon Fruit Mojito
Ingredients
- 2 ounces of light rum
- 1/2 ounce of lime juice
- 2-3 tbsp of diced dragon fruit
- 1/2 ounce of simple syrup
- 5-7 mint sprigs torn
- splash of soda water
Instructions
- Add fruit, mint and simple syrup to shaker. Muddle gently. Add rum, ice and shake. Pour into rocks glass and top with soda water.
