I’ve got a friend who’s one amazing baker. She goes by Benny’s Baker and makes the most insane desserts. She recently shared this triple berry trifle recipe that was made entirely from scratch. Including the lemon filling. I got inspired by this recipe, but realized I’m too lazy to make pudding from scratch. Let alone have the patience to bake an angel food cake and wait for it to cool (that’s the hardest part people). Taking inspiration from Benny’s Baker, I went ahead and made a semi-homemade version with Kozy Shack tapioca pudding (my favorite), store bought angel food cake and sliced berries. Yes, the cutting of the berries is the homemade part. Adding layer by layer, I created a mock version of her trifle. I know she won’t be impressed by this, but I’m impressed that I only ate one of these, and not both single serve trifles.
These easy berry trifles are perfect for summer time. Quickly whip them up for a quick dessert when company pops over. The single serve is what makes these so cute and fun, and throwing in a little American flag toothpick is kind of perfect for 4th of July too.
