When I renovated my entire kitchen, I had to empty every single cabinet. This quickly turned into a giant purge and I ended up tossing lots of kitchen tools and appliances that were 10 years old and screamed college years. You know what I’m talking about, that $10 coffee maker, those plastic, melted spatulas that didn’t survive late Friday night cooking sessions. It was time to upgrade a few things like awful plastic cooking utensils to mismatched dish towels. Other items that got the boot were my nasty toaster that had seen hundreds of pieces of bread, a beat up blender and said $10 plastic coffee maker. Needless to say it was long overdue and felt really good to get rid of lots of kitchen clutter I no longer used or needed to be upgraded.

To break in my new pieces, I’m sharing my favorite avocado toast recipe and it’s super simple. I had my first avocado toast experience in Los Angeles almost two years ago when I was out there for a work trip. We stayed at the Ace Hotel in the garment district and we all ordered our own avocado toast. One bite and I was hooked. I’ve been making it at home ever since because Atlanta doesn’t have a ton of avocado toast options. And to be honest, mine rules. Enjoy it with a cup of coffee and even add a poached egg on top for a truly hearty brunch dish.
Start by toasting your bread (I usually do sourdough but using a five grain today), mash up one avocado along with the juice of half a lemon, few dashes of salt, pepper and crushed red pepper flakes. Smear it all on your toast and top with fun things like sliced radishes, smoked salmon or a fried egg! It also makes for a great mid afternoon snack that won’t weigh you down and looking for a nap. It’s become one of my favorite easy dishes to whip up.
