Today is National Coffee Day and although there’s a national day for just about everything, I wanted to celebrate. But let’s be honest, there are only two that I care about, National Donut Day and National Coffee Day. In honor of my morning fuel, I thought I’d share one of my favorite ways to enjoy coffee. Iced, with homemade mint simple syrup. It’s refreshing and delicious, and the perfect way to start your morning.
How To Make Mint Simple Syrup For Your Coffee
The great thing about this recipe is that you can make a big batch of both iced coffee and mint simple syrup and keep it on hand in your fridge to enjoy whenever your caffeine craving strikes. To make, simply begin with my cold brew coffee recipe.
To make the mint simple syrup, all you need is equal parts sugar and water and gently simmer in a pot until the sugar has dissolved. I add in 7-10 mint sprigs (torn at least once to help release some oils) and let it sit for a little while (20 minutes will do!). Pour your simple syrup into a small carafe and let it cool. It’s best to let this sit overnight in the fridge to really infuse the syrup.
Ingredients
- 1 cup sugar
- 1 cup water
- 10 sprigs of mint
Method
Add sugar and water to a small pot and simmer until dissolved. Then add your mint sprigs (tear them so it releases some oils) and let it sit for about 20 minutes. Strain out your mint leaves, and store in the fridge.
Mint Iced Coffee Recipe
INGREDIENTS
- 1-2 tbsp of mint simple syrup or however sweet you want it
- Splash of cream
- Your favorite iced coffee
METHOD
To make your new favorite coffee drink, add your iced coffee to a glass, add in 1-2 tbsp of simple syrup and a splash of cream. That’s it! This will taste like a fancy coffee drink for much much less. Mint and coffee are one of my favorite flavor combinations and this is exactly how I’ll be celebrating National Coffee Day. I think you’ll love this as much as I do!
Ways To Use A Mint Simple Syrup
Now that you have a bunch of mint simple syrup, you’re probably wondering, what else can I use this for? It makes a decent amount and it’s so easy to make. It really elevates a lot of cocktails, coffees and even tea. Try making my watermelon mint lemonade with this simple syrup. Or even a pomegranate mint margarita!
And one of my absolute favorites is this peach bourbon smash cocktail. You can even use this to sweeten your tea with a nice minty hint to it. It’s a nice touch to cocktails, lemonades and yes, your morning coffee! Trust me!
