I’ve been pretty vocal about my love for True Food Kitchen lately. It’s delicious in every way, it’s light and healthy, you can order half portions of everything and the desserts are to die for (stay tuned for a rhubarb crisp knock off too!). My go to salad at True Food Kitchen is their Mediterranean Salad. It’s fresh, delicious, full of flavor and filling. Since I’d rather not shell out $18 for a fucking salad, I thought I’d finally recreate it at home now that I’m, well, finally living back home….
My Mediterranean Salad Recipe
Today’s recipe is easy and only consists of a few basics ingredients. Add in whatever else you like from different protein, or veggies to make it more filling for a meal. But what it really comes down to is the dressing. My recipe is for a single serving, because I’m single… deal with it. Easily double or quadruple the recipe to make a batch for your family.
Ingredients
- Red Quinoa
- Kalamata Olives – sliced
- Watercress
- Feta Cheese
- Sliced Cucumber
- Sliced Baby Tomatos
- Sliced Red Onion
- Option Add Ins: Shrimp Chicken, Roasted Potato,
For The Dressing
- 1/2 tsp Dijon Mustard
- 1/4 tsp Honey
- Salt and Pepper To Taste
- Garlic Powder To Taste
- Pinch of Oregano
- Red Wine Vinegar
- Olive Oil

Ingredients

Instructions
- Cook your quinoa according to the package. While this cooks, chop your veggies and make your dressing. Toss all your ingredients together and serve.
