I don’t know about you, but right now my friends and I are on the hunt for ways to get together that’s socially distanced, outdoors and includes delicious food! And good conversation of course. We’ve been doing front porch hangs, bringing dishes or snacks. And even lounging in the backyard of my friend’s beautiful three-level epic outdoor space. It’s a great way to get together, catch up and still be socially distant. So I wanted to try something new and this easy s’mores personal cookie with graham cracker dippers was a fun recipe to make. And you won’t believe how we did it!
Backyard Cooking In The Traeger Pro 575
In our latest hang out session, we decided to try out the Traeger Pro 575 grill. It’s a smoker, grill, combo. And it’s beyond easy to use. It even has an app that you can easily set it even if you’re still inside. It uses wood pellets that move through the hopper to be ignited. A fan circulates the heat creating even consistent cooking whether you’re smoking a piece of meat, or grilling. And in today’s recipe, it actually works just like a convection oven to BAKE. Since the Traeger Pro 575 technology maintains a consistent temperature, you can easily bake, grill, smoke with ease.
For this recipe and sweet entertaining experience, I set the Traeger Pro 575 to 350 Fahrenheit and used the maple pellets. Which is the real key to this recipe! There are several wood pellet options to choose from depending on what you’re smoking or grilling. But for any sweet recipe, I suggest using the maple as it has a more mild flavor and pairs well with sweets. And no, these s’mores don’t come out tasting like a smokey fire or anything. You would honestly never know the difference. Longer cooking times may lend a slight flavor, but that’s why the maple is great for sweets!
How To Make Single Serving S’Mores Cookies
This is one of the easiest things you’ll ever make. You can also make it a bit more complicated by making your chocolate chip cookie dough from scratch. You can use my chocolate chip cookie recipe here. But for the sake of simplicity, I went with pre-made refrigerated cookie dough. Plus, the options to making this your own are kind of endless. this is also SO good a la mode with a scoop of ice cream on top instead of using graham crackers. And you can add Nutella, Reese’s Pieces, or whatever else you like!
Ingredients
- Cookie dough – 4 servings used up the entire log (yes these are indulgent servings!)
- 1 Bag of marshmallows
- Favorite chocolate bars
- Graham crackers
- Ice cream (a great option to add on top instead of the graham crackers!)
- Cooking spray or butter
What You Need
- Traeger Pro 575
- 4 Mini cast iron skillets
- Maple pellets for Traeger Pro 575
Method
Step One – Preheat Your Traeger Pro 575
Preheat the Traeger to 350 Fahrenheit and pour in some maple pellets. You can do this on the app too which makes it super easy if you already keep pellets in your Traeger so you can set it while you’re in your house prepping the ingredients
Step Two – Get The Cookies Ready
Take each of the mini cast irons and spray them with non-stick cooking spray. Cut your log of dough into slices about a third of an inch thick. Then arrange them into a single layer in each cast iron skillet. Don’t worry if it’s not perfect, they’ll spread and be just fine once they cook. I also added the marshmallows at this point and cooked them all together the entire time.
Step Three – Cook for 15 Minutes
Place the cast iron skillets into your Traeger and close the lid. Cook for 15 minutes. Your marshmallows will puff up, then deflate a bit. It’s fine, still tastes delicious. If you really want them to not be so melty or have a more burnt top and still be big puffy marshmallows, you can always add the last 5 minutes and then torch the tops with a mini torcher.
Step Four – Add The Chocolate
Add your chunks of chocolate for an extra hit of chocolate goodness right as you’re taking them off. I do this at the end so they’re not totally melty but instead gooey. It’s kind of the best. You can also add whatever else you like. If you prefer something peanut buttery, add some Reese’s Pieces. Or even sprinkles, or nutella! The options are endless!
Step Five – Enjoy With Graham Crackers
Dipping graham crackers into the warm cookie with all the oozy chocolate and marshmallows is heaven! You can also just eat it with a fork, or add a scoop of vanilla ice cream on top.
