What’s your favorite Thanksgiving side dish? I think mine is my Mom’s sweet potato pie. Now, it’s not actually a pie. So I don’t know why we call it that. It’s really a casserole I suppose. But I never knew what a casserole was until I moved to the South, so there’s that. This sweet potato pie is a take on my Mom’s recipe. I had to fancy it up just a bit and top it with the simplest maple bourbon glaze.
Thanksgiving is finally here and I know some of you are already planning Friendsgiving and other fall gatherings. If you’re looking for an easy to make and delicious side dish, this is it! It comes together fairly quickly and doesn’t require a lot of ingredients.
Sweet Potato Pie With Maple Bourbon Glaze
INGREDIENTS
For The Sweet Potato Pie
- 2 40 oz cans of canned yams (drained)
- 1 16oz can of crushed pineapple, drained
- 1/2 tbsp Cinnamon
- 1/2 tsp Nutmeg
- 1/4 cup maple syrup
- Splash of bourbon
- Mini marshmallows (as many or as few as you like)
For The Glaze
- 1/2 cup maple syrup
- 1/2 cup of bourbon
- 2 tbsp brown sugar
DIRECTIONS
Step One
Preheat the oven to 350 degrees Fahrenheit.
In a large bowl mash the yams, pineapple, sugar, maple syrup, cinnamon, nutmeg and splash of bourbon. Taste and add more sugar or syrup if you think it needs it. Keep in mind there’s a maple glaze going on top so you don’t want it TOO sweet!
Step Two
Transfer the mixture into a 9×12 baking dish and bake for 40-45 minutes. I used a square pan so I baked mine a tad longer since it was more dense.
Step Three
While your sweet potato pie is baking, heat a small saucepan over medium heat. Add bourbon, sugar and maple syrup. Stir and gently simmer on low until its reduced, about 10-15 minutes.
Step Four
When your sweet potato pie is almost done in the oven, add some mini marshmallows and let them brown a bit. Once you take it out, drizzle your maple bourbon syrup over the top and serve.
