Pumpkin Bread

Ingredients

  • 3 cups all purpose flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice I left this out since I don't have it on hand
  • 1/4 tsp clove
  • 1/4 tsp salt
  • 2 cups canned pumpkin puree
  • 1 cup granulated sugar
  • 1 cup packed dark brown sugar
  • 4 eggs
  • 1/4 cup vegetable oil
  • 1 2/3 cup buttermilk

Instructions

  • Preheat oven to 350 and coat two 8 1/2 by 4 1/2 loaf pans with butter or cooking spray.
    In a large bowl whisk flour, baking powder, baking soda, spices and salt.
    In an electric mixer with the paddle attachment combine pumpkin and sugars and mix until well combined. About 2 to 3 minutes.
    Add eggs and oil, mix until incorporated. Scrape down the sides of the bowl.
    With the mixer on low, add in the flour and milk in 2 batches alternating. Begin and end with flour.
    Divide the batter into two pans and bake for 55 to 60 minutes or until a toothpick comes out clean. 
    Remove loaves from pan and let cool completely.
